FANTASTIC LOCAL CUISINE
During your journey, you'll sample dishes that
are distinctive to each region at each meal of
the day. Recipes from the high Andes have been
developed and refined for thousands of years,
whilst the rainforests and Ecuadorian soil
provide simply outstanding produce. With
flavours that leap off the plate, the cuisine itself
is quite varied, given the Spanish, Brazilian and
even Mexican influence. Western favourites are
almost always available should you desire a
more familiar taste.
THE DEVIL'S NOSE
Connecting the Alausà and Sibambe stations,
the Devil's Nose in the Chanchan Valley is
possibly the most spectacular part of your rail
journey. Considered the most popular of all
Ecuador's train tracks, the Devil's Nose is named
after the sheer difficulty encountered during
the building process and the deaths that
followed. Climbing some 500 metres over just
12 kilometres, this section of the track involves
a series of incredibly engineered switchbacks
and offers some truly captivating views.
