A Taste of CANADA Karen Burns-Booth shares two easy Newfoundland- inspired recipes, celebrating Canada's rich culinary mix shaped by culture, landscape and tradition. These delicious raisin tea cakes (scones) are light and fluffy, and are the mainstay of all tea rooms, as well as cosy tea times at home in Newfoundland. I enjoyed these at a friend's house when I visited the province, and she kindly gave me the recipe for these fruity bakes, which are extremely easy to whip up, and are perfect with a cuppa. Serve warm, buttered and with jam if you like. Newfoundland Raisin Tea Cakes 49 | Viking Explorer Society News Makes 8 servings 75g butter 2 large eggs 75g caster sugar 4 tsp baking powder 230 ml milk 500g plain white flour 240g of raisins Extra sugar for sprinkling 1. Preheat oven to 200C/180C fan/400F/gas mark 6. Grease or line a large baking sheet. 2. Put all the ingredients except the flour and raisins in a food mixer with a paddle attachment and mix on low until all combined. 3. Add the flour and raisins and mix briefly. 4. Turn the dough out onto a floured surface, knead slightly, and press out to a height of about 5cm. 5. Press out tea cakes with a round cookie/biscuit cutter until all the dough has been used (I used a 5.7cm cutter). 6. Place the tea cakes on the prepared baking sheet. 7. Bake in the oven for 15 minutes until well-risen and golden brown. Sprinkle with a little extra sugar. 8. Serve warm, split and buttered. Well, I disagreed then as I do now; there may not be the range of well-known recipes that we know of from other parts of the world, but Canada's food scene is vibrant and growing day by day. Having worked with Destination Canada Tourism for many years, I was lucky enough to visit nearly every province, and my overriding experience is that Canada has a very diverse culinary platform, based mainly on its immigrant population, local terroir, agriculture and First Nations traditions. When deciding on which recipes to share, I chose a famous food truck snack and a special tea-time bake from Newfoundland. Both recipes are easily made at home, unless you're lucky enough to be sailing in the region, where you can enjoy them both onboard or when visiting the different ports on your journey. Enjoy!
