Mike Van de Elzen let's hear it from the boys MIKE VAN DE ELZEN is best known for his healthy, quick and easy approach to preparing food. The Food Truck Cook Book with his latest recipes is now available in good book stores. THE ONE THING I WISH I KNEW ABOUT WOMEN: Actually I think there are many things I need to learn, and according to my wife I haven't even begun to understand! 9-5 YOU WILL FIND ME: With the Food Truck filming. At the moment I could be anywhere in the greater Auckland area filming – keep an eye out for me! AFTER 5 YOU WILL FIND ME: More than likely still filming, working for Hallertau Brewery but fingers crossed out enjoying a meal with friends and family. WHY I LIKE LIVING IN: MT ALBERT: The soil is so fertile even I can grow vegetables and fruit. I CAN'T DO WITHOUT: My wonderful wife (brownie points), my daughter, family, friends and my mountain bike. In that order (double brownie points!). CELEBRATE: Around a BBQ or open fire! Friends+wine+food = laughter, great times and memories. UNDERRATED: Great Barrier Island. I have only been there once but I can't wait to go back! MY FAVOURITE THINGS: Black T-shirts, mountain bikes and my old, green lawn mower. LAST MOVIE/CD/BOOK: Bad Boys 2, Marco Pierre Whites latest autobiography. ALL TIME FAVOURITE BOOK/CD: City of Joy (especially reading it while travelling trough India), Shape Shifter. NEXT HOLIDAY: Nelson and the Marlborough Sounds. GUILTY PLEASURE: Crofters cheesecakes (it's been a while, but I think about them almost daily). BEST ADVICE: Look after you family first. The locals where pulling on its tail and when it turned around I was in front of him! WHAT'S NEXT: Some time out to figure out which door to open next. FAVOURITE RECIPE: A rotisserie chicken on smoked potato mash and rocket. ROAST PUMPKIN, SMOKED BACON, SHREDDED CHICKEN & ORSO WITH WILD ROCKET Makes 6 Roast pumpkin 1/3 crown pumpkin salt and pepper olive oil Orzo 1 cup orzo 6 rashers bacon 2 cups shredded roasted chicken 1 cup cream salt and pepper 1/2 cup grated parmesan ¼ cup grated parmesan for garnish ½ handful rocket chopped, handful chopped for garnish flaky salt plus extra Celebrity Chef To prepare the pumpkin, preheat oven to 180 degrees. Peel de-seed and dice pumpkin. Season with salt, pepper and olive oil. Place in ovenproof pan and fry until golden and cook in oven for approx. 10-15 minutes or until tender. To prepare the orzo, boil the water in a large sauce pan. Add salt, then orzo and bring back to the boil. Reduce the heat and simmer for about 10 minutes or until tender. Drain and refresh in cold water. Set aside. To serve, fry the bacon in a large non-stick pan until golden. Add chicken, 3 cups of pumpkin and 1 cup orzo, and quickly toss. Add cream, salt, pepper and reduce until thick. Add grated parmesan and chopped rocket.
