Today, a local archaeologist will guide you through Mexico's largest ancient city, Teotihuacan. Built between the 1st and 7th centuries, the holy metropolis is one of the most powerful cultural centres in Mesoamerica and is famous for its enormous monuments, including the Pyramid of the Sun and the Pyramid of the Moon. Next, enjoy lunch at a nearby plantation before seeing the celebrated Catholic shrine, the Basilica of Guadalupe. BL Day 8. Puebla. As you approach the city of Puebla, pass by Cholula and see the Church of Our Lady of Remedies. The resplendent church is built atop a pyramid perched high on the mountain, appearing striking against the landscape. During a tour of Puebla, you'll see this beautiful colonial city is characterised by hundreds of buildings adorned with decorative tiles known as Talavera. But it is the cuisine for which the people of Puebla are the proudest. Perhaps take the opportunity to sample a local favourite, mole poblano – a chocolate-tinged sauce made with chillies and spices. This evening, enjoy dinner at a local restaurant. Stay: Puebla, Quinta Real. BD Day 9. Oaxaca. After breakfast, travel to the colourful city of Oaxaca. Arrive at your luxurious 16th-century hotel, where floral gardens, brilliant courtyards and serene fountains inspire. The romantic property was once the Convent of Santa Catalina de Siena with much of the original structure having been restored to its former glory. Embark on a tour of the city's sightseeing highlights. Journey along the charming pedestrian street and see the impressive cathedral and the Convento de Santo Domingo. You'll learn why the Historic Centre has inspired so many artists and artisans alike, with local tradition still very much alive. Three Night Stay: Oaxaca, Quinta Real. BD Day 10. Oaxaca, Freedom of Choice. Choose from two sightseeing options today. Perhaps explore the ancient ruins of Monte Albán, forming part of a World Heritage-listed site. Resting high on a hilltop, the ruins offer breathtaking views of the surrounding landscapes and city below. Alternatively, see the remarkable 2,000-year-old Cyprus tree before arriving at the ruins of Mitla. You'll then continue on to visit a Zapotec village in the Teotitlán Valley, home to expert weavers, famous for creating colourful, hand-woven rugs. B Day 11. Oaxaca. Discover why Oaxaca is the gourmet heart of Mexico during a fun cooking class at a local restaurant, focusing on dishes that can easily be recreated when you return home. Before putting on your apron, you'll take a tour of a bustling market nearby, where delicious local ingredients and the best ways to use them in your cooking are explained. Return to the restaurant for your lesson, all the while, learning about the wondrous depth and flavour of Mexican cuisine as you prepare lunch. Afterwards, spend the rest of the day exploring the city at your own pace. BL Day 12. Oaxaca, San Cristóbal de las Casas. After breakfast, journey to one of the most spectacular places in Mexico's south-east, Cañon del Sumidero, for an awe-inspiring boat ride. The canyon's almost vertical walls are adorned with colourful caves and waterfalls, including the Árbol de Navidad (Christmas Tree). You can also see the many birds and monkeys who call the area home. Next, fly to Tuxtla Gutierrez, before travelling to the city of San Cristóbal de las Casas.
