Abeer Al Suwaidi BEETROOT RISOTTO This risotto is incredibly vivid in colour, delicious in flavour and made easy using G'NOSH Beetroot & Mint dip. The combination of colour and flavours make this risotto a stand out success and perfect for special occasions. Ingredients 500g fresh whole beetroot 2 tbsp olive oil Knob of butter 1 onion, finely chopped 1 garlic clove, finely chopped 250g risotto rice 150ml white wine 700ml hot vegetable stock Handful grated Parmesan (or vegetarian alternative) 4 tbsp sour cream (alternatively use cream fraiche and / or crumble goat's cheese) Handful chopped flat parsley Cooking instructions 1. Peel and dice the whole fresh beets into quarter wedges. Roast at 175 degrees for 20 minutes until soft and able to poke a knife through. When the beets are cooked, dice them into small 1cm cubes. Use kitchen gloves if you do not want to get your hands stained. 2. Melt the butter in a saucepan and cook the onion until softened. Add in the risotto rice and stir until well coated, keeping the rice from sticking to pot. 3. Pour over the vermouth and cook, stirring, until almost fully absorbed. Add a ladleful of the stock to the rice and stir until almost fully absorbed. 4. Continue adding the stock, a ladleful at a time, until the rice is tender and creamy. You may not need all of the stock. 5. Stir through a tub of G'NOSH Beetroot & Mint dip. This gives further depth in colour, richness in flavor and a kick. 6. Remove from heat and add the grated Parmesan, gently stirring to mix. Serving Serve on a white plate. Add a dollop of sour cream or cream fraiche on the top with cracked pepper. You may want to sprinkle some more Parmesan or even crumble some goat's cheese on top. Almost 10 years ago, when Abeer first began designing abayas - using it as a canvas to express her creativity - she was quick to grasp that the culturally symbolic attire could make a strong fashion statement, while staying true to its roots. During an exasperating search for 'different' abayas, she realised that while everything else had changed or evolved, the world of abayas remained static and the same. It also dawned on her that there was no one-stop-shop to showcase local and regional designers. This, and praise for her handiwork, led to the launch of her signature designs and her designer boutique, USH. Driven by creativity and originality, Abeer soon set about launching new concepts, styles and materials, many of which have now become the norm by way of imitation and adaptation by peers. Among her many trend-setting innovations, she has introduced the world to the skinny abaya, illustrated abaya, abayas fitted with corsets, and abayas made of cotton, jersey and knotted fabrics. She has also introduced vibrant colour, spikes, epaulettes and harnesses to the abaya. Abeer believes that fashion is an essential part of every woman's life, and expressing oneself through clothes is a natural extension of both person and personality. Her approach is unrestrained, her influences are international, and her designs incorporate both fusion and futurism. She personally admires the cutting-edge work of international designers Comme des Garçons, Yohji Yamamoto and AF Vandevorst. Abeer Al Suwaidi has won regular applause at the Dubai Fashion Week since 2009 (earlier as USH Design), and is stocked at USH, Symphony, and Bloomingdale's.
