Macaroni Cheese Serves 6-8
Ingredients 500 g macaronia little olive oil 125 g butter 3 Tbsp cake flour 2 cups grated mature Cheddar cheese 2½ - 3 cups milk 2 tsp Dijon mustard 1 tsp paprika sea salt and freshly ground black pepper to taste
½ cup grated Parmesan cheese 1 x 125 g pkt salt and vinegar crisps or any spicy crisps, crushed Method 1. Preheat the oven to 180°C. 2. Cook the macaroni in a pot of salted water. Drain and toss with a little olive oil to prevent sticking. Set aside. 3. Melt the butter over a low heat. Add the flour, Cheddar, milk, mustard and paprika.
Stir until thick, combined and smooth. Season with salt and pepper. 4. Combine the pasta and cheese sauce and transfer to a roughly 37 x 18 cm ovenproof dish. Sprinkle over the Parmesan and crisps. 5. Bake for about 25 minutes until hot. The topping should be golden and crispy. 6. Remove from the oven and allow to stand for 5-7 minutes before serving.
