Let's hear it from the boys Paul Blomfield has more than 20 years experience as a consultant to the fashion, clothing, textiles and creative industries in New Zealand. Paul has been a judge at many prestigious events including the Westfield Style Pasifika, Smokefree Fashion Awards, The DuPont Lycra Awards and the Wools of New Zealand Fernmark Award. A public speaker and communicator, he speaks on a broad range of topics, from branding to sourcing to event management. After 5 you will find me: At events, openings or parties – some people say I'd go to the opening of a paper bag - such is life in PR. Why I like living in: Auckland. You'd be surprised how few Aucklanders were actually born here. I was. Where else is the tranquil East Coast so close to the rugged West? Perfect for a water baby like me. I can't do without: Surfing. My turangawaewae is Piha Beach. It is the place I revert to my natural self. I've surfed since I was 10 – too late to stop now! Celebrate: That we live in miraculous times. No matter how tough it is, these are great and momentous days in history. Under-rated: The far north of New Zealand. My favourite things: Surfing, rock power ballads played very loud when I'm home alone or playdough creations with my grand-daughter. Last Movie/CD/Book: Movie: Limitless. CD: New York Town by Israel Nash Gripka. Book: Birds Without Wings by Louis de Bernières. A lovely story from the Turkish side of the battle for Gallipoli. All time favourite book/CD: 100 Years of Solitude by Gabriel Garcia Marquez. CD: Wish You Were Here by Pink Floyd. Guilty pleasure: Classic, noisy V8s. Best advice: Never believe your own press – (even if you are in PR). Woman you admire most: Annah Stretton Your mentor: Evan Vertue Best health tip: More than four double- shot coffees a day is probably bad for you. Favourite saying: "Life happens" Best life balance tip: Sorry, but I have no balance. I am my work and work is my life – but I do run off when the wind is in the east and go surfing – any day of the week Worst moment: Speaking at a conference – the speaker before me wrecked the AV and I couldn't get my presentation to work. Without it I froze – the memory still eats me up. What's next? The events side of my business is so strong and such fun – we have something every month to look forward to, with challenges, victories and achievements. Favourite recipe: My wife Jill is a celiac so I make her gluten free pancakes on Saturday morning with organic, natural, honey-cured bacon and seasonal fruits. Thick & Fluffy Pancakes – Jamie Oliver Style Ingredients 3 large eggs 1 cup white rice flour 1 tsp heaped baking powder 3/4 cup of milk Pinch of salt Method First, separate the eggs, putting the whites in one bowl and the egg yolks into another. Add the rice flour, baking powder and milk to the egg yolks and mix to a smooth thick batter. Whisk the whites with the salt until thick and fluffy. Fold into the batter. Heat your favourite skillet on a medium heat. Wipe butter on to the skillet. Pour some of your batter into the pan and fry for a couple of minutes until the bubbles rise. Flip and fry until both sides are golden. In a separate pan, fry bananas split in half (in their skins) and other seasonal fruits.
