2 tbsp butter
1 tbsp brown sugar
1 tsp honey
½ lemon, juice only
1 tbsp Dijon mustard
1 tbsp soy sauce
Salt and freshly ground
pepper
1 large side of salmon (allow
175-225g per person)
1 Preheat the oven to 175°C.
2 Melt the butter, brown sugar and honey in a small saucepan
over a low heat. Remove from the heat and whisk in the
lemon juice, mustard, and soy sauce. Season to taste and
allow to cool.
3 Place the salmon on a large baking sheet lined with baking
paper. Brush the glaze generously all over the salmon. Bake
for 20 -25 minutes or until cooked through.
