v i k i n g c r u i s e s . c o m . a u 37 The Mediterranean is one of the most popular cruise destinations in the world — and with good reason. From the riveting histories of Greece and Italy to the pristine beaches of Spain and Croatia, the region is as fascinating as it is picturesque, and the cuisine is simply divine. 6. Osso Buco An Italian meal of tender veal shanks braised slowly in white wine, served with an array of vegetables and gremolata — a condiment made with lemon zest, garlic and parsley. 8. Grilled Sardines A simple Croatian specialty, the freshly caught sardines are dipped in olive oil and seasoned with salt, garlic, lemon juice and rosemary before being lightly grilled, then served with fresh bread. 5. Paella A flavoursome Spanish rice dish made with vegetables and either chicken, seafood or chorizo. Paella is traditionally cooked in a shallow pan over an open fire. 9. Octopus Salad A popular Croatian creation made with boiled, diced octopus and chopped tomatoes, onion, parsley, olive oil, garlic, vinegar, salt, pepper and lemon juice. 7. Spanakopita A traditional Greek pie filled with chopped spinach, feta cheese, ricotta cheese, eggs, onions and seasoning, enveloped by crispy filo pastry. 10. Tiramisu A coffee-flavoured Italian dessert made with ladyfingers (savoiardi) dipped in coffee and layered with a whipped mixture of eggs, sugar and mascarpone cheese, flavoured with cocoa.
