Memorable Meals with Dr. Libby Weaver DR LIBBY WEAVER (PH.D) is one of Australasia's leading nutrition specialists and weight loss experts. Dr Libby's passion for empowering people to make optimum health choices has led her to consult privately with individuals, in the corporate health arena, as well as with universities and the media. She is the best-selling author of 3 books and a much sought after and passionate speaker covering a broad range of topics that leave her audiences well informed and uplifted. Dr Libby's first degree was in Nutrition and Dietetics and she then went on to complete her Ph.D examining biochemical and nutritional factors in children with autism at The University of Newcastle, Australia, the outcomes of which have affected the way in which the condition is treated in Australia and now also in New Zealand. It was through this work that Libby came to better understand the role various hormones play in influencing our body shape and size, our appetites, our responses to exercise and stress, clarity of thought, sleep patterns and a host of other behaviours. MY BEST MEAL Being someone who is passionate about delicious, healthy food that serves my body, mind and soul, how is a girl to choose just one? So I haven't… instead, here's two! Having co-created and released my Real Food Chef cookbook in 2012, my number one experience happened the first time I ate the Real Food Chef "Pizza", satay and "cheesecake" and yes, all in one sitting! My Real Food Chef co-creator. Chef Cynthia Louise had run a test kitchen for the meals we had designed and the first time (and every time since to be honest!) my senses have almost exploded with the sheer delish-factor of this food. It tastes truly amazing and more importantly for me, it is packed with nourishment. Sitting around the table with my husband, my mate the Chef and a super star colleague in my apartment, I was filled with delight at their company, the fragrances of the food in the air and the spectacular, nourishing food we had created to share with the world. I'll never forget that evening. MY WORST MEAL Number two … There is a super special dining experience in New York City at my favourite restaurant in the world, called Pure Food & Wine. In fact, whenever I'm in NYC I book my accommodation to stay as close as possible to this place! They serve purely organic food which I know for many of you will make you wonder how it can taste good but believe me… it is not only mind-blowing for me but for every single kiwi buddy I have taken there! The food is so creatively presented, the flavours are extraordinary and the desserts blow your head off with their yum factor, especially their "ice-cream sundaes". They also have a back garden lit with fairy lights and a take away version of the restaurant in the side street where you can buy take-away sundaes! Yum scrum. It was so bad, in the end I didn't even eat! I typically take my own food with me for a long haul flight but on this occasion, there wasn't the space in my schedule to stop at Wholefoods. I arrived at LAX airport having flown across the USA and forever the optimist, thinking of course I'd find some Real Food, something green and vegie somewhere within the terminal. The one place that may have offered something remotely like this was closed and all that remained was a deep fried, fake food festival. I am astounded that a place like LA LA Land does not have any healthy options at its airport. In fact it never ceases to astound me how poor the food quality is in most airports around the world. Nutrients keep us alive and sure it's what you do every day that impacts on your health, not what you do sometimes so I am well aware that a deep fried fest for one meal was no big deal for me. But given that every time you spend money you are casting a vote for the kind of world that you want, it was a lousy meal experience because these "food" outlets wouldn't be there if people weren't eating there. My mission is to educate and inspire people, improving their health and happiness, and through that process, create a ripple effect that transforms the world, and it is my hope that some day soon there will be as many nutritious food outlets at airports as the less healthy options. www.h e rmagaz in e .co.n z | 73
