As Australia's first dedicated art hotel, this string of historic buildings on Hobart's Constitution Dock holds a soft spot for Australians who still spread IXL jam on their toast. This is where the delicious preserves were made from 1859 until 1979. Henry Jones is the name of an English émigré who became the first employee of original jam-maker George Peacock when he was just 12. From pasting labels on jam tins, he took over the company which had interests on five continents. His motto: "I excel, in all the products I make" led to the branding of this national icon. Top Tasmanian architects Morris-Nunn & Associates seamlessly connected the seven buildings together to offer 56 rooms and suites which are filled with antiques, artefacts and some 300 contemporary artworks. An old copper boiling pot is now a water feature in the atrium, some rooms feature old factory machinery and the two-storey Peacock Terrace suite boasts an original spiral staircase. www.thehenryjones.com
